This year my mom gave me the Aldi version of an instant pot for Christmas. I am seriously in love with this thing! It makes meal prep so much easier and it makes clean up go quicker. I spent the first week or two learning some of how it works. Now I am ready to try my hand at some recipes of my own. I wanted to share the instant pot ranch chicken and rice recipe I put together.
Instant Pot Ranch Chicken and Rice Recipe

3 cups chicken stock
1 pound chicken breasts
2 tablespoons garlic
1 tablespoon soy sauce
2 cups rice
1 Ranch seasoning packet
Frozen vegetables of your choice
Start by quartering your chicken breasts.
Pour your ranch seasoning over your chicken.
Add garlic and soy sauce to the bottom of the instant pot.
Add 2 cups of rice.
Add 3 cups of chicken stock.
Set to chicken for 13 minutes. You can also choose manual to 13. (Make sure that the vent is set to seal.
When cooking is completed. Release the vent and let naturally release. I let mine vent for about 10 minutes.
Pull out the chicken and shred it.
Pour your mixed vegetables and chicken back into the rice. Stir in. The vegetables will heat up from the residual heat of the rice.
Serve and enjoy.
