I have started using the Instant pot to meal plan and to freezer cook. One of my favorite things to make with the family is tacos. However, with my daughter’s new braces she can’t have hard taco shells. I wanted to find a fun way to let her enjoy tacos so I put together this Instant Pot Taco Bowl recipe! Bonus points for the fact that it freezes really well!
Instant Pot Taco Bowl Recipe
**Disclaimer – This recipe does make more than one family meal’s worth. It’s great for freezer cooking or for a taco bar.
3 Chicken Breasts
1 Packet Taco Seasoning
Taco Bowls – I got mine at Aldi but I am sure other stores have them.
2 cups rice
2 cans seasoned black beans
Taco Blend Shredded Cheese
Salsa – If you eat it. Hubby does and we don’t.
1 1/4 cups water
Instant Pot Taco Bowl Recipe Directions
Add 2 cups of rice and 1 1/4 cups of water.
Make sure your instant pot is set to seal.
Cook on manual for 18 minutes.
Release seal and let vent completely.
Pull out your chicken breasts and use a fork to shred them up.
Add them back to the pot and stir.
Serve and enjoy!
Any filling you don’t use for this meal can be bagged and frozen.
To reheat, pour into a pot with 1/2 cup water and stir until heated thru. The water will help keep your rice moist.
This would be fantastic if you chose to do a taco bar with friends. You could make a huge batch and then let everyone add whatever they wanted to them as they liked. Talk about a great no fuss meal!
