Every year a good friend of my husband would make us a delicious Christmas meat pie. When he moved jobs the meat pie stopped but my annual craving for it didn’t. This week I sat down and tried to put together a new recipe for something similar to the meat pie we are gifted every year. While this isn’t the same, I am very happy with the beef pie recipe I have put together. I hope you enjoy it as well. The beauty is, it doesn’t have to wait for Christmas time.
Beef Pie Recipe
1 pound lean ground beef
1 can cream of chicken soup
2 Cups beef broth
2 Cups Potatoes cubed
1 tablespoon onion powder (you can use actual onion if you like it)
1 tablespoon pepper
1 tablespoon crushed garlic
What to do
Preheat oven to 425.
Season ground beef
For this I used the pepper, onion powder, and garlic.
Cook on medium heat until browned and drain off excess grease.
While your ground beef is browning, cube 2 cups of potatoes. – For mine that was about 2 small russet potatoes.
Add potatoes, beef broth, and cream of chicken to pot with cooked hamburger – Let this cook on low.
Place your pie crust in the pan.
Add top crust, fold over, and pinch to seal. – Make sure to cut four slits into the top for the steam to vent.
(Wrap a thin amount of foil around the edge of the crust to avoid burning.
Bake at 425 for 37 minutes.
Serve and enjoy.
This is definitely becoming a comfort food and my family asks for it often. I love that it is simple to make and takes very little time. I may even freeze one for another day.
