This week we had our Christmas as a family a little early. We enjoyed a wonderful turkey dinner with good friends and family in our home. Even with the number of people here I ended up with leftover turkey. I decided it was time to put together an easy homemade turkey pot pie recipe to use some of the leftovers. This recipe is very versatile and would freeze well if you wanted to use it for a future meal.
Easy Homemade Turkey Pot Pie Recipe
You could easily freeze this pie before cooking for a future meal. Short on time? Throw the ingredients in the crock pot instead of a stock pot and use it to fill a pie crust when you get home. You can also make a large batch of the filling to add to a pie crust on a busy night when you need a quick easy meal. This really is a versatile recipe. I love that it is extremely easy to make.
Ingredients
1 1/2 cups chicken broth
1 – 10.5 oz can cream of chicken soup (If you know an alternative way please let me know!)
1 1/2 cups mixed vegetables (I used frozen but you can use what you like to.)
1/4 cup cubed peeled potatoes
1 1/2 cup cubed turkey
1 – 2 ct pie crust
How to make this easy homemade turkey pot pie
In a large pot add all ingredients except the pie crust.
Cook on medium heat until potatoes are your desired texture.
While your filling is cooking, line your pie dish with your first pie crust.
Pour your filling into your pie pan.
Put your second pie crust on top and pinch to seal.
Use a sharp knife to put a few holes for the steam to vent thru.
Bake at 425 degrees for 30 minutes.
Let cool. Serve and enjoy.
