With the transition to public school and back to homeschool, we have had a lot of adjustments to make to our meal plan. I needed simple and quick meals for the family with minimal prep. A lot of these are my recipes. I found things I liked on Pinterest or techniques with the Instant Pot and modified the recipes for us to enjoy. Most of these are minimal prep and so delicious!
This is one of the favorites in this house. In fact, my son is not a big fan of chicken but he will eat all of it when I make this recipe. It also freezes well if you want to heat it up and eat it on a different night. You could add in some carrots or other vegetables. We generally serve ours on the side.

Ranch is one of my favorites. I love to dip my french fries in it or add it to my chicken. This recipe may not be for everyone but it was the perfect recipe for this ranch lover. In fact, I would probably add more ranch because I love it.
